Organically-produced wheat spirit is macerated for 18 hours with eight different botanicals, including Sweet Gale harvested from the family farm. As the spirit runs off the still it undergoes a unique juniper filtration process, which Dutch gin spirit distillers call ‘dubbel gebeide genever’. This double-contact method results in a pronounced juniper flavour. The spirit has pure water added to it before it is rested for a minimum of two weeks and then bottled at 46% ABV.

Canaima is a delicious 47% ABV gin created to support the Amazon rainforest and its native population. 

Created from ten Amazonian botanicals, sustainably sourced in the rainforest, one botanical from the distillery region in Venezuela, and eight traditional gin botanicals, all the botanicals are individually macerated and re-distilled in a 500 litre copper pot still to create a truly small batch gin.

The Mereworth Oak Aged Gin brings an English vintner’s touch to a timeless spirit, using the time-honoured techniques of compounding, blending and maceration.

They steep a handful of carefully selected botanicals in 100% wheat spirit, before marrying this with some of the finest toasted oak available in winemaking, imparting nutty, spicy and citrus flavours to their amber-gold gin.

Rock Rose Gin gets its wonderful flavour from a carefully selected and put together creation of local and traditional botanicals. Each one meticulously chosen for their flavour properties to create the perfect taste.

Boatyard Old Tom is made using  Boatyard Double Gin, which is distilled with eight different botanicals and produced in ‘Doc Brown’, Boatyard’s 250-litre still. Once distilled, the spirit rests for a minimum of four months – drawing flavour and colour from the cask – before the addition of Fermanagh honey for natural sweetness. Old Tom has notes of candied lemon peel, vanilla and cinnamon spice, with a silky orange finish. Slightly sweeter than London Dry but drier than Dutch genever, Old Tom is sometimes referred to as ‘the missing link’.

Esker Gin is crisp, clean and juniper led; this classic gin has its own distinctive notes with over a dozen botanicals, locally sourced silver birch sap, citrus and a hint of our floral botanicals.
