If you want a piece of Champagne history then this is your bottle. Billecart-Salmon have always been considered rose specialists, and in 1988 they took the decision to honour Elisabeth Salmon, the wife of Nicholas Francois Billecart, the Champagne house's founder, by producing a premium rose cuvee. This Champagne is only produced in the very best vintages, from the very best vineyards and following meticulous practices.This extremely delicate cuvee is elaborated from an equal blend of Pinot Noir and Chardonnay. They are vinified as white wine, to which some Pinot Noir from Mareuil-sur-Ay, vinified as red wine, has been added. This great wine emphasises the strict methods of vinification of Billecart-Salmon. If you are new to mature vintage champagne then be prepared for far less fizz, a coppery colour and rich flavours of stewed red fruit and a nutty finish.
