The grapes that are used for the Gran Reserva Cabernet Sauvignon come from vineyards in the Buin area of the Maipo valley. In terms of the climate, this area has moderate day temperatures and cool nights which helps to create a longer ripening period. Harvest happens during the last week of April and is carried out by hand in the early hours of the morning to avoid oxidation. The grapes pass along a double sorting table where damaged grapes and bunches are removed prior to fermentation. Each vineyard lot is vinified and aged separately until mixed info a final blend that is aged in French barrels for a further 12 months.
