Sourced primarily from a mature, dry-grown vineyards in the McLaren flat sub district of McLaren Vale. The fruit is hand-harvested and sorted before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (30% new French) for ten months before bottling with minimal filtration and sulphur addition.
Aromatically charged with red berry fruit aromas hints of vanilla fresh ground spices and ripe plums. Soft and seductive tannins help shape the wine yet the weight of fruit ensures it remains lithe and generous.The palate rewards with fruit vibrancy, nuanced spice and milk chocolate and a fine, integrated acidity drive a long enjoyable finish. The wine is looking great right now but will also age confidently with very careful cellaring for up to 5 years.
