A distinctive expression of Marsala, ‘Uncle Joseph’ Rubino Dolce from Pellegrino pays tribute to the historic Anglo-Sicilian roots of the style, offering a fruit-led and gently spiced interpretation of this fortified classic.
Tasting Notes:
Deep ruby in colour. The nose is vibrant and expressive, with aromas of red cherry, wild strawberry and redcurrant, layered with subtle hints of spice. On the palate, it is smooth and sweetly fruited, with flavours of ripe plum and berry compote balanced by a fresh lift and soft tannic structure. A touch of oak adds warmth and complexity, leading to a rounded, persistent finish.
Winemaking:
Produced from Nero d’Avola grown in the coastal vineyards of western Sicily. The grapes are harvested at full ripeness and undergo a short cold maceration before partial fermentation. This is then arrested by fortification with aged grape spirit, preserving natural sweetness. The wine is matured for over two years in oak casks, allowing integration of fruit, spice and structure while retaining its youthful character.
Food Pairing:
An excellent partner for chocolate desserts and red fruit-based dishes such as berry tarts or cheesecake. It also pairs well with fresh cheeses served with fruit preserves, or can be enjoyed as a versatile after-dinner wine.
