The oxidised nature of Oloroso makes it a great sherry to have in the cupboard as it will retain its character for some time once openened, if you can resist polishing it off straight away of course. Its deep colour, roasted nut and dried fruit character and long finish make it almost irrisistable. It's delicious with food, especially raised game pies and spiced lamb tagines.
