A supple and expressive Hautes-Côtes de Beaune Rouge from Domaine Billard, showcasing the freshness and charm of Pinot Noir grown at altitude on clay-limestone soils. This is a pure and approachable Burgundy, combining generous fruit with a refined structure and a clear sense of place.

Tasting Notes:
Bright ruby in the glass, the nose reveals fresh red cherry and raspberry alongside delicate floral and lightly spiced notes. The palate is juicy and open, with vibrant red fruit supported by fine, silky tannins. Supple and well-balanced, it finishes with freshness and a gentle savoury edge.

Winemaking:
Grapes are hand harvested and carefully sorted before fermentation in concrete tanks over around 10 days, allowing for gentle extraction. The wine is then matured for approximately 10 months, predominantly in tank with a small proportion in oak barrels, adding subtle texture while preserving the purity and vibrancy of the fruit.

Food Pairing:
An easy and versatile red, ideal with roast chicken, pork dishes and grilled meats. It also pairs well with charcuterie and soft cheeses, where its freshness and supple structure complement lighter, savoury flavours.
