A sumptuous “baby-Amarone” style from Veneto, Neropasso combines the elegance of fresh grapes with the richness of semi-dried fruit. Made from a blend of Corvina, Corvinone, and Cabernet Sauvignon, it delivers the depth, concentration, and harmony that the appassimento technique is renowned for.
Tasting Notes:
Intense ruby with garnet highlights, the nose reveals spiced red and black cherries, ripe plums, and subtle compote notes. On the palate it is full-bodied and velvety, with soft, integrated tannins, gentle spice, and a persistent, harmonious finish. The semi-dried grapes provide concentrated richness, while the fresh grapes preserve brightness and lift.
Winemaking:
Hand-harvested grapes are carefully sorted, with a portion undergoing appassimento, drying in ventilated fruttaio rooms for several weeks to concentrate sugars and flavours. After soft pressing, fermentation takes place partly in stainless steel tanks and partly in Tonneaux, allowing the wine to develop both freshness and complexity. The combination of fresh and dried grapes produces a structured, elegant wine with layered texture and a long, expressive finish.

Pairs beautifully with roasted and grilled meats, braised dishes, hearty pasta sauces, and mature cheeses. Its balance of freshness and concentrated fruit also complements game and slow-cooked stews.
