Pale gold in the glass with a fine, persistent mousse, the nose opens with fresh aromas of green apple, melon and delicate honeyed blossom. The palate is bright and well-balanced, showing flavours of crisp apple and subtle baked fruit, supported by lively acidity. A gentle mineral note and a touch of biscuity complexity carry through to a clean, composed finish.
Winemaking:
Produced using the traditional method with bottle fermentation, allowing for the development of fine bubbles and subtle autolytic character. Crafted from estate-grown fruit and made in small batches, reflecting careful vineyard management and a focus on quality.
