Delicate pink in colour with a fine, persistent mousse, the nose is bright and lifted, showing aromas of fresh strawberry and raspberry with a subtle citrus edge. The palate is crisp and lively, with red berry fruit balanced by fresh acidity, leading to a clean, refreshing finish with good length and finesse.
Winemaking:
Produced using the traditional method with bottle fermentation, allowing for the development of fine bubbles and subtle complexity. Made from estate-grown fruit and crafted in small batches, reflecting careful vineyard management and attention to detail.
Food Pairing:
Excellent as an apéritif, and well suited to light canapés, seafood and summer dishes. Also pairs well with fresh salads and soft cheeses.
