An elegant and refreshing Crémant de Limoux from Domaine de Tholomiès, produced in one of the Languedoc’s most historic sparkling wine regions in the foothills of the Pyrenees. Crafted using the traditional method, this cuvée blends Chardonnay, Chenin Blanc and Pinot Noir to create a finely balanced and expressive sparkling wine.
Tasting Notes:
Pale gold in colour with a fine, delicate mousse, the nose is fresh and inviting, offering floral aromas alongside notes of citrus and a hint of almond. The palate is crisp and well-balanced, with lively acidity supporting flavours of lemon, quince and orchard fruit. Subtle lees ageing adds a gentle touch of toast, leading to a clean, refreshing finish.
Winemaking:
Produced by the traditional method, with a second fermentation in bottle followed by around 12 months ageing on the lees. This process enhances texture and aromatic complexity while preserving the wine’s natural freshness and vibrancy.
Food Pairing:
A versatile sparkling wine, ideal as an apéritif or served with light starters, seafood and canapés. Its freshness also makes it a good match for salads and soft cheeses.
