A finely poised Hautes-Côtes de Beaune Blanc from the hillside parcel of “La Justice” in La Rochepot, where higher altitude vineyards and limestone-rich soils bring a naturally cooler expression of Chardonnay. This is a pure, elegant Burgundy shaped by freshness, precision and a clear sense of place, offering excellent definition and quiet depth.

Tasting Notes:
Pale gold in the glass, the nose is lifted and mineral with notes of white blossom, citrus peel and ripe pear, underpinned by a subtle stony character. The palate is fresh and vibrant, showing lemon, orchard fruit and gentle stone fruit richness. A fine balance of tension and texture runs through the wine, with bright acidity and a long, clean finish that carries a distinctive mineral edge.

Winemaking:
Hand harvested Chardonnay from clay-limestone soils is gently pressed using pneumatic press. Fermentation takes place under controlled conditions, followed by maturation in tank through to the spring after harvest. This approach preserves the purity of fruit and the natural freshness of the Hautes-Côtes terroir, allowing the vineyard character of “La Justice” to remain at the forefront.

Food Pairing:
A versatile white Burgundy that works beautifully as an aperitif, or alongside seafood, shellfish, grilled fish and white meats in light sauces. It also pairs well with soft cheeses and classic French dishes such as snails or jambon persillé, where its freshness and mineral backbone bring balance and lift.
