A luxuriously rich expression of classic Sherry, this Pedro Ximénez from Williams & Humbert showcases the depth and intensity for which the style is renowned, crafted in the heart of Jerez using time-honoured solera ageing.

Tasting Notes:
Deep mahogany in colour with a dense, viscous appearance. The nose is intensely aromatic, offering concentrated notes of raisins, dried figs and dates, layered with hints of molasses, caramel and subtle cocoa. On the palate, it is sumptuously rich and velvety, with profound sweetness balanced by a gentle underlying freshness. Flavours of treacle, fig compote and roasted nuts unfold into an exceptionally long, warming finish.

Production:
Made from 100% Pedro Ximénez grapes, which are traditionally sun-dried after harvest to concentrate natural sugars and flavours. The wine is then aged through the traditional Criaderas and Solera system in Jerez, allowing gradual oxidative maturation in seasoned American oak casks. This long ageing process builds complexity, texture and depth, characteristic of the finest PX styles.

Food Pairing:
Best enjoyed in small pours as a dessert wine or after-dinner indulgence. It pairs beautifully with blue cheese, dark chocolate, sticky toffee pudding, and dried fruit-based desserts. It can also be served alongside coffee or enjoyed on its own as a rich finale to a meal.
