Cape Wild Sauvignon Blanc is a vibrant, cool‑climate style wine showcasing the expressive potential of South Africa’s premium vineyard sites. Fruit is sourced predominantly from Elgin, with small parcels from cooler sites in Paarl and Franschhoek.
Tasting Notes:
The nose shows intense citrus and crushed nettle aromas. Ripe, concentrated fruit on the palate is balanced by grapefruit tang and leafy characters, with taut, mineral notes and a long, textural finish.
Winemaking:
Grapes were hand‑harvested, gently pressed and the juice allowed to settle for 48 hours. Fermentation took place naturally in stainless steel tanks, with minimal sulphur added, and the wine remained on the gross lees for five months to enhance texture and complexity.
Food Pairing:
Pairs beautifully with shellfish, fresh oysters, grilled white fish, lightly spiced salads or goats’ cheese.
