From the foothills of the Montagne Noire, Domaine de Tholomies produces this powerful and expressive red from the prestigious La Livinière appellation — widely regarded as the cru of Minervois and one of the most distinguished terroirs of the Languedoc. The estate’s organically farmed vineyards benefit from warm Mediterranean sunshine tempered by cooling mountain influences, allowing the grapes to ripen fully while retaining balance and structure.
Tasting Notes:
Deep and intense in colour, the nose reveals layers of dark cherry, blackberry and ripe plum, intertwined with notes of peppered vanilla, black olive tapenade and dried fig. The palate is generous and concentrated, with smooth, mature tannins and rich flavours of roasted coffee, dark chocolate and dark fruits. The finish is long and structured, showing both depth and refinement.
Winemaking:
Sourced from vineyards on the slopes of the Montagne Noire, the grapes are cultivated using organic practices that prioritise vineyard health and fruit quality. Careful vinification and maturation allow the wine to develop its characteristic richness and complexity while preserving the expressive character of the La Livinière terroir.
Food Pairing:
A superb partner for roasted meats, game dishes, slow-cooked stews or mature cheeses. While the wine has the structure to age gracefully, it already offers generous drinking pleasure today.
ABV: 14.5%
