Valpolicella Classico Superiore Ripasso from Cà dei Maghi is a richer, more structured expression of Valpolicella, produced using the traditional ripasso method. Made from the classic local varieties, primarily Corvina, Corvinone and Rondinella, this style gains extra depth and complexity from a secondary fermentation over the skins of Amarone grapes.
Tasting Notes:
Deep ruby red with light garnet reflections, the nose is intense and layered, offering aromas of ripe red cherries, dried berries and sweet spices. On the palate it is broad and harmonious, with concentrated fruit, soft tannins and a rounded texture, leading to a long, warming finish with subtle sweet and savoury notes.
Winemaking:
After the initial fermentation, the young Valpolicella wine undergoes a second fermentation on the dried grape skins left from Amarone production, a process known as ripasso. This technique enhances structure, alcohol and aromatic complexity while preserving freshness. At Cà dei Maghi, the wine is crafted in small quantities with meticulous attention to detail, reflecting the estate’s quality-driven, artisanal approach.
