A precise and expressive Chablis from Domaine Fournillon that captures the purest characteristics of Chardonnay grown on the region’s famed Kimmeridgian limestone soils. Sourced from parcels in and around Fleys, this is a wine defined by clarity, tension and a distinct mineral backbone, reflecting the cool climate and fossil-rich terroir of northern Burgundy.
Tasting Notes:
Pale straw in colour with a bright sheen, the nose is clean and lifted, showing citrus peel, green apple and white blossom alongside a distinctive flinty, oyster-shell minerality. The palate is crisp and focused, with lemon, orchard fruit and a subtle saline edge. Fresh acidity runs through the wine, leading to a long, precise finish marked by purity and mineral drive.
Winemaking:
Grapes are harvested from selected vineyard parcels in the Chablis region and gently pressed using pneumatic press. Fermentation takes place in temperature-controlled stainless steel tanks to preserve freshness and aromatic precision. The wine is then aged in tank for approximately 12 months before bottling, maintaining its linear structure and mineral expression without the influence of oak.
