A structured and age-worthy Chinon from Serge et Bruno Sourdais, produced from old-vine Cabernet Franc grown on south-facing slopes in the renowned “Les Clos” parcel. Planted on clay-siliceous soils rich in flint, these 60–70 year old vines yield a wine of depth, concentration and clear expression of its terroir.
Tasting Notes:
Deep and vivid in colour, the nose shows ripe red and dark berry fruit with subtle notes of spice and a hint of undergrowth. The palate is full and firm, with a fleshy core of fruit supported by well-defined tannins. Powerful yet balanced, it develops complexity with a long, structured finish.
Winemaking:
Grapes are sourced from mature vines on south-facing slopes, where low fertility soils naturally limit yields and enhance concentration. Fermentation lasts between three and four weeks, depending on the vintage, to maximise extraction of colour and structure. The wine is then aged for 12–15 months in large oak vessels, including foudres and demi-muids, allowing it to develop complexity while preserving varietal character.
Food Pairing:
Pairs beautifully with both red and white meats, game dishes and mature cheeses. Its structure and depth also make it an excellent partner for classic French cuisine.
