The depth of the ruby colour matches the elegance of the bouquet, fine and delicate, with aromas of black fruits, notes of liquorice and sweet spices. Soft and intense, the palate starts with silky tannins and a nice freshness which stretches the wine into a finish of rare length, generous and spicy. A Pauillac that's delicious now but which will keep and develop for 5-6 years!
Appellation AOC Pauillac is situated on the left bank of the Gironde and has all the climatic and geological
conditions required to produce wines of the highest quality. This AOC boasts three wines that figured in the
first five Grands Crus Classés of 1855. With its 1,200ha of vines, Pauillac produces 54,000hl of red wine
every year. The terroir for these vines is a knoll of gravelly soil planted with Cabernet Sauvignon, Merlot and
to a lesser extent with Petit Verdot and Malbec. Experts are unanimous that Cabernet Sauvignon is in its
element in this terroir.
The vineyard is tended with a respect for environmental balance. Yields are controlled, the grapes handpicked. Winemaking: pump-overs and maceration times differ from vat to vat depending on which block the grapes come from and tannic ripeness. Alcoholic fermentation: in wood and stainless steel vats, temperaturecontrolled. Maceration 15-20 days. Malolactic fermentation in wood and stainless steel vats Aged 20 months in oak barrels.
