A limited release from Hattingley Valley, solely available to a select group of Independent Merchants. This is an exceptional wine that has undergone an extended ageing period to help build texture, fineness of mousse and those delightful biscuity notes that is unique to traditional method sparkling wines.

Pale gold in colour with a fine, persistent mousse. The nose reveals inviting aromas of toasted brioche, pistachio and honey, lifted by the freshness of green apple. On the palate, vibrant orchard fruits continue with crisp green apple and the gentle crunch of red apple peel. Bright citrus and creamy lemon posset bring beautiful balance, lingering in an elegant and lasting finish.

Production:
The hand harvested grapes were whole bunch pressed to extract top quality juice. 25% of the total blend was fermented in old white Burgundy barrels with 11% of the blend going through malolactic fermentation, in order to soften the wine’s natural acidity. To ensure the consistency and continuity of their signature style, 12% of reserve wines (that had naturally softened and developed over time in oak barrels and stainless steel tanks), were added to the blend before secondary fermentation. It spent 5 years ageing on lees in bottle, to gain extra roundness before disgorgement.

It impressed us hugely at recent tastings so we were delighted to get our hands on some. At this price we think it represents very good value for money. It is a true Champagne toppler.
