A refined vintage English sparkling wine from Hattingley Valley in Hampshire, this 2019 Vintage Cuvée showcases the estate’s hallmark precision, extended lees ageing and thoughtful use of oak to build depth, texture and complexity.
Tasting Notes:
Pale gold in colour with a fine, persistent mousse. The nose opens with elegant aromas of toasted brioche, pistachio and honey, lifted by fresh green apple and citrus zest. On the palate, bright orchard fruit leads with crisp green apple and red apple peel, supported by lemon zest and a creamy, almost pâtisserie-like note of lemon posset. The extended ageing brings richness and finesse, while vibrant acidity carries through to a long, composed and elegant finish.
Winemaking:
Crafted from a traditional blend of Chardonnay (63%), Pinot Noir (26%) and Pinot Meunier (11%), the fruit is hand-harvested and gently whole-bunch pressed. A proportion of the base wine is fermented in old Burgundy barrels, with partial malolactic fermentation softening natural acidity. Reserve wines are incorporated to enhance complexity and consistency, before secondary fermentation in bottle. The wine is then aged on lees for an extended period to develop texture, depth and refined autolytic character prior to disgorgement.

A versatile sparkling wine that pairs beautifully with roast poultry, shellfish, smoked salmon and creamy dishes, as well as richer vegetarian plates. Equally compelling as a celebratory aperitif, where its complexity and fine mousse can be fully appreciated.
