A characterful Bourgueil from Domaine des Mailloches, crafted from old-vine Cabernet Franc grown on clay-limestone, sandy and gravelly soils in the heart of the appellation. Sourced from vines up to a century old, this cuvée reflects both the depth of the terroir and the concentration that comes with age, offering a structured and age-worthy expression of this classic Loire red.
Tasting Notes:
Deep in colour, the nose reveals concentrated aromas of black fruits, particularly black cherry and plum, with hints of liquorice. The palate is full and structured, combining dark fruit intensity with firm yet balanced tannins. Broad and powerful, it retains harmony and finishes with persistence and depth.
Winemaking:
Grapes are harvested by hand from old vines, with careful selection to retain only the best fruit. Fermentation takes place over two to three weeks at controlled temperatures, with regular pumping over to enhance extraction. Following malolactic fermentation, the wine is matured in tank for an extended period to refine structure and preserve purity of fruit.
Food Pairing:
Pairs beautifully with grilled and roasted red meats, slow-cooked dishes in rich sauces, and mature cheeses. A classic partner for hearty, savoury cuisine.
