Pale straw in colour with green highlights, the nose is expressive and lifted, offering citrus zest, grapefruit and green apple alongside notes of gooseberry, white peach and subtle floral tones. The palate is crisp and focused, with a clean line of acidity supporting bright citrus and orchard fruit. A distinct mineral edge runs through the wine, adding texture and precision, while the finish is long, refreshing and gently flinty.
Winemaking:
Produced from 100% Sauvignon Blanc in the Quincy appellation, where traditional vineyard practices and careful site selection allow the varietal’s aromatic purity to shine. Fermentation takes place in temperature-controlled stainless steel to preserve freshness and fruit definition, with a brief period on fine lees contributing subtle texture and balance.
