A refined and expressive Beaune 1er Cru from the single climat of “Les Chouacheux”, crafted by Domaine Billard in the heart of the Côte de Beaune. Grown on clay-limestone and silty soils, this Pinot Noir combines depth, finesse and precision, reflecting both the quality of the vineyard site and the domaine’s careful, low-intervention approach.
Tasting Notes:
Deep ruby in colour, the nose is complex and layered, opening with ripe black cherry, blackberry and blueberry, followed by subtle spice, liquorice and a hint of tobacco. The palate is structured yet supple, with concentrated dark fruit balanced by fine-grained tannins and fresh acidity. Elegant and persistent, it finishes with savoury nuance and a refined mineral edge.
Winemaking:
Grapes are hand harvested and carefully sorted before undergoing fermentation with indigenous yeasts. The wine is matured for 12 to 15 months in French oak barrels, with a proportion of new oak, adding depth and complexity while preserving clarity of fruit and site expression.
Food Pairing:
A distinguished Burgundy that pairs beautifully with roast beef, lamb, game and richly flavoured dishes such as braised veal or mushroom-based recipes. It also works well with mature cheeses, where its structure and aromatic complexity come fully into focus.
