This 2023 Chenin Blanc from Holden Manz Wine Estate is made from fruit grown on 35‑year‑old bush vines, harvested early in the cool morning to preserve freshness. The estate’s meticulous viticultural practices ensure pristine fruit quality before fermentation.
Tasting Notes:
Pale lemon in colour with an elegant, perfumed nose, showing citrus, white flowers, jasmine and white peach. On the palate it is medium‑bodied with refreshing acidity and vibrant flavours of pear, summer melon and lemon, finishing with subtle texture and a gentle length.
Winemaking:
After cooling to 5 °C, the whole bunches are gently crushed and clarified. The wine undergoes wild fermentation, with 80 % in stainless steel and 20 % in French oak barrels (first and second fill). Continuous stirring on the fine lees for six months enhances texture and complexity.
Food Pairing:
Pairs beautifully with lightly spiced calamari salad, herb‑crusted goat’s cheese with fresh baguette, roasted baby kingklip or other delicately flavoured seafood and salads.
