Holden Manz Chenin Blanc is produced from 35 year old bush vines. The berries are picked in the cool of the early morning then chilled to 5ºC before being whole bunch crushed using the "champagne" cycle. Clarified juice is wild fermented 80% in stainless steel tanks and 20% in French oak barrels (50:50 first and second fill). The wine is constantly stirred on the fine lees for 6 months before bottling.
Pale yellow lemon; elegant, perfumed nose; symphonic notes of jasmine, citrus, gooseberries, white peach, candied naartjie peel. Medium bodied with refreshing acidity; full entry features pear, quince, summer melon, lem-on and a gentle long elegant finish. Pair with lightly spiced calamari salad, herb crusted goats cheese with fresh baguette or roasted baby kingklip.
