The Iris Cabernet Sauvignon from Bodegas Staphyle comes from the Agrelo vineyards in Luján de Cuyo, Mendoza. Situated in high‑altitude vineyards with warm days and cool nights, these 25‑year‑old vines are trained on high trellises and drip‑irrigated with meltwater to ensure healthy, balanced fruit.
Tasting Notes:
Bright deep ruby in colour, the wine shows spicy aromatics with hints of green pepper and dried fruits. The palate delivers pure varietal expression with smooth, velvety tannins and a gentle, approachable finish.
Winemaking:
Grapes undergo spontaneous fermentation at controlled temperatures between 23–27°C, with a total maceration of 23 days. Natural malolactic fermentation occurs without the addition of lactic cultures, and the wine is aged a minimum of six months in bottle before release.
Food Pairing:
Enjoy with grilled red meats, tomato‑based stews, or mature cheeses — dishes that complement its rich, structured fruit and smooth tannins.
ABV: 13.5%
