A youthful and vibrant organic Cabernet Sauvignon from South Australia, made from fruit grown in ACO-certified organic vineyards planted on flat red soils. The warm, dry 2021 vintage allowed even ripening, producing smaller berries with higher sugar levels and a good yield.
Tasting Notes:
On thew nose, a complex bouquet of ripe blackcurrant and dark fruit, with notes of tobacco, graphite, cedar, and peppery spice. On the palate it has a silky and rounded mouthfeel that presents with juicy dark fruit flavours of blackcurrant and plum. Subtle vanilla and tobacco notes from oak aging add depth, while elegant tannins provide a nice structure.
Winemaking:
The 2021 vintage in South Australia was characterized by a cool growing season after years of drought. This allowed the vines to express vibrant fruit characteristics, and cabernet was a standout for its excellent colour, concentration, and tannins.The wine was matured for nine months in older American oak, allowing the fruit character to remain prominent while adding subtle texture and complexity.
