A vibrant expression of Assyrtiko from the island of Crete, crafted by Diamantakis Wines, a family estate dedicated to producing wines that reflect both the heritage and potential of Cretan viticulture. Assyrtiko, originally native to Santorini, thrives in Crete’s hot and dry climate, delivering wines of remarkable freshness and mineral character.

Tasting Notes:
Pale straw in colour, the wine opens with fresh citrus and floral aromas complemented by subtle notes of Cretan herbs such as thyme and oregano. On the palate it is crisp and lively, with high acidity and a textured mouthfeel enhanced by three months of lees ageing. The finish is long and mineral, reflecting the grape’s natural precision and the region’s distinctive terroir.

Winemaking:
Made from 100% Assyrtiko grown on sustainably managed vineyards in Crete, fermentation and lees ageing are employed to add depth and complexity while preserving the grape’s fresh and vibrant character. Minimal intervention techniques allow the wine to express both varietal purity and the influence of its Mediterranean environment.

Food Pairing:
An excellent partner for seafood, shellfish and grilled fish, as well as salads and vegetable dishes. Its bright acidity and mineral backbone also complement Mediterranean cuisine and dishes with herbal seasoning.
