A sumptuous Primitivo Appassimento crafted by renowned Puglian winemaker Paolo Leo in San Donaci, between Lecce and Brindisi, within the Negroamaro Park. This wine captures the richness and depth of Puglia’s sun-drenched vineyards, blending the vibrancy of fresh grapes with the concentrated intensity of partially dried fruit to create a full-bodied, harmonious expression of the native Primitivo grape.

Tasting Notes:
Deep ruby in colour, the nose is expressive with ripe cherries, raspberries, and blackcurrants, enhanced by subtle dried fruit and gentle spice from oak maturation. The palate is generous and velvety, revealing flavours of plums, damsons, and a hint of raisin, alongside notes of garrigue and soft spice. The finish is long and layered, with concentrated fruit providing balance and persistence.

Winemaking:
Under the guidance of Paolo Leo, a portion of the grapes is harvested early and partially dried using the appassimento technique to concentrate sugars and flavours, while the remainder is picked fully ripe to preserve freshness. After destemming, the grapes undergo fermentation at controlled temperatures in stainless steel, followed by ageing in oak barrels, which integrates fruit, spice, and structure. The combination of dried and fresh grapes results in a wine of both depth and elegance.

Food Pairing:
Pairs beautifully with roasted and braised meats, hearty pasta dishes, aged cheeses, and slow-cooked Mediterranean stews. Its concentrated fruit and balanced structure also complement grilled game and richly spiced vegetable dishes.
