Tasting Notes:
Bright ruby red in colour, the nose is fragrant and expressive with aromas of red cherry, raspberry and blackcurrant complemented by violet, fresh herbs and a subtle graphite note. The palate is medium-bodied and lively, with juicy red and dark berry fruit framed by fine-grained tannins and refreshing acidity. Notes of pepper, crushed stone and delicate earthiness add complexity, leading to a fresh, savoury and persistent finish.
Winemaking:
Produced from 100% Cabernet Franc grown in Arnaud Lambert’s organically farmed vineyards around Saumur and Brézé, where limestone-rich tuffeau soils bring freshness and mineral definition. Careful harvesting and gentle extraction preserve the grape’s perfume and purity, with fermentation using indigenous yeasts. Restrained maturation allows the vibrant fruit, fine tannins and distinctive limestone character to remain at the forefront.
Food Pairing:
An excellent match for roast lamb, grilled pork, duck breast and charcuterie. It also pairs beautifully with mushroom dishes, lentil casseroles, herb-roasted chicken, grilled vegetables and mature goat’s cheese.
