Tasting Notes:
Pale golden in colour with brilliant green highlights, the nose is refined and complex, offering aromas of white blossom, ripe citrus, green apple and white peach, layered with subtle notes of wet stone, oyster shell and a delicate touch of hazelnut. The palate is beautifully poised and concentrated, revealing vibrant flavours of lemon zest, orchard fruits and mineral salinity, balanced by crisp acidity and a silky texture. The finish is long, elegant and intensely mineral, leaving a lasting impression of freshness and finesse.
Winemaking:
Produced exclusively from Chardonnay grapes grown within the prestigious Grand Cru vineyard of Blanchot, where Kimmeridgian limestone soils impart exceptional mineral character. The grapes are carefully harvested at optimum ripeness before gentle pressing and temperature-controlled fermentation. The wine is matured on its fine lees to build texture and complexity while preserving the purity, precision and distinctive expression of this celebrated terroir.
Food Pairing:
A superb partner for lobster, crab and scallops, as well as grilled turbot, Dover sole and other premium seafood. It also pairs beautifully with roasted poultry in cream sauces, veal, wild mushroom dishes and mature soft cheeses such as Brie de Meaux or Chaource.
