Domaine de Saje is a small family estate of around 7.5 hectares in Châteauneuf-du-Pape, overseen by Jérôme Mathieu, the latest in a lineage of more than nine generations of winemakers in the appellation. The vineyards comprise 23 parcels within Châteauneuf-du-Pape and a further three in nearby Orange. Planted with all thirteen grape varieties permitted by the historic appellation decree of 1936 and farmed without herbicides, the vines are cultivated with a strong respect for both terroir and tradition.
Tasting Notes
Deep ruby in colour, the wine opens with aromas of small red fruits, including cherry and redcurrant, complemented by subtle hints of spice and garrigue. The palate is supple yet powerful, with generous fruit and soft, well-integrated tannins that lead to a long, harmonious finish.
Winemaking
The grapes are harvested entirely by hand at full maturity from parcels dominated by Grenache, which typically accounts for around 80% of the blend, with the remaining proportion made up from the other authorised varieties of the appellation. Fermentation takes place in the family’s historic cellar in the village of Châteauneuf-du-Pape, with partial destemming of the Grenache. The wine is then matured in large traditional oak foudres for approximately 12–18 months before bottling.
Food Pairing
An excellent partner for roast lamb, grilled meats, duck, or hearty Provençal dishes. It also pairs well with mature cheeses.
