Passimora is a distinctive Sicilian red from Cantine Pellegrino, one of the island’s historic wine estates founded in Marsala in 1880. Made in the sun‑soaked vineyards of western Sicily, this wine showcases the expressive character of Nero d’Avola grapes that are slightly dried in the warm Mediterranean sun to enhance concentration and aromatic depth.

Tasting Notes:
Deep red in the glass with garnet hues, Passimora offers a broad and enticing bouquet of ripe red fruit, pomegranate and dried plum, with subtle notes of candied fruit. The palate is soft‑textured and richly flavoured, with gentle, well‑integrated tannins and a persistent warmth that reflects the pure expression of Sicilian Nero d’Avola.

Winemaking:
Made from 100% Nero d’Avola, the grapes are allowed to ripen fully and undergo a slight drying process in the warm Sicilian sun before fermentation, which enhances fruit concentration and aromatic intensity. After carefully monitored fermentation, the wine is aged in stainless steel to preserve freshness while allowing the concentrated fruit character to develop. The result is a wine that balances richness with approachability.

Food Pairing:
An excellent match for cured meats and charcuterie, seasoned and fresh cheeses, tomato‑based pasta dishes, and hearty stews. Its richness and soft texture also complement grilled vegetables and slow‑cooked Mediterranean fare.
