A refined expression of Pouilly-Fuissé from the Mâconnais, this cuvée “Villa Cantrius” captures the elegance and structure for which this renowned southern Burgundy appellation is celebrated. Sourced from limestone-rich soils across the Pouilly-Fuissé villages, it delivers a poised Chardonnay defined by clarity, texture and a fine sense of mineral balance.
Tasting Notes:
Pale gold with green reflections, the nose is expressive and refined, showing citrus blossom, white flowers and fresh orchard fruit alongside a subtle hint of mint and wet stone minerality. The palate is rounded yet precise, with flavours of lemon, pear and ripe stone fruit supported by a fine line of acidity. A gentle creamy texture adds depth, leading to a long, clean finish with a persistent mineral edge.
Winemaking:
Grapes are harvested from selected Mâconnais parcels and gently pressed before undergoing fermentation in temperature-controlled stainless steel tanks at low temperatures. The wine is then aged on fine lees for around 12 months in tank, enhancing texture and subtle complexity while preserving freshness and varietal purity. No oak influence is used, allowing the character of the Chardonnay and terroir to remain central.
Food Pairing:
A versatile white Burgundy that pairs beautifully with grilled or roasted fish, shellfish, chicken dishes in light sauces and creamy vegetable risottos. It also works well with soft cheeses and fresh salads, where its balance of freshness and gentle richness enhances delicate flavours.
ABV: 13.5%
