A vibrant introduction to orange wine from the Languedoc, crafted by Fredéric Garrabou, a producer steeped in generations of vine-growing in Limoux. Made from a trio of classic white grape varieties, the wine gains its distinctive colour, flavour and gentle tannins through extended skin contact, revealing a textured yet approachable style that showcases the expressive potential of this technique.
Tasting Notes:
Pale, clear orange in the glass, with intense aromas of bitter orange, dried flowers and subtle nutty notes. On the palate, fresh tropical flavours combine with a hint of spice and a soft, textural tannic frame. Well-balanced with bright acidity, the wine offers a long, complex finish that carries the aromatic richness through to the end.
Winemaking:
Grapes are machine-harvested at night to protect freshness and reduce oxidation. They are placed directly into concrete vats and undergo pre-fermentation maceration at cool temperatures for one week, with daily pumping-over. Alcoholic fermentation takes place at 18°C, followed by a further five days of maceration. The press juice is blended with the free-run juice to complete fermentation, and the wine is aged on fine lees until bottling, preserving its aromatic intensity and texture.
Food Pairing:
Best served lightly chilled. Pairs beautifully with a plate of aged cheeses such as Roquefort or Époisses, as well as lightly spiced poultry dishes, particularly chicken with a morel or cream-based sauce.
