Domaine de Saje is a small family estate of approximately 7.5 hectares in the heart of the Châteauneuf-du-Pape appellation, run by Jérôme Mathieu, whose family has been making wine in the region for more than nine generations. This white cuvée is produced from a small parcel planted entirely with Clairette, one of the traditional white grape varieties authorised within the appellation. With only a very limited annual production, it represents a distinctive and increasingly rare expression of white Châteauneuf-du-Pape.
Tasting Notes
Pale green-yellow in colour with silver reflections, the nose is aromatic and fresh, showing notes of ripe pear, peach and hints of candied citrus, complemented by subtle floral and lightly anised nuances. The palate is balanced and elegant, combining gentle richness with lively acidity and delicate mineral notes that carry through to a refined finish.
Winemaking
Produced from 100% Clairette grown on the estate’s carefully tended vineyards. The grapes are harvested by hand and vinified in small temperature-controlled enamelled steel tanks. The wine is aged on its fine lees to build texture and complexity, while malolactic fermentation is deliberately avoided in order to preserve freshness and aromatic clarity.

Pairs beautifully with grilled fish, shellfish, poultry dishes or light Mediterranean cuisine.
