A sumptuous Appassimento Rosso from Cantine Pirovano’s Collegione Beatrice range, this wine combines the richness of partially dried grapes with the freshness of fully ripened fruit. From the sun-drenched vineyards of Puglia, it delivers depth, elegance, and the expressive character of the region’s native varietals.
Tasting Notes:
Deep ruby in colour, the nose is layered with aromas of dried red fruits, black cherries, subtle tobacco, and leather. On the palate it is full-bodied, velvety, and persistent, with smooth, integrated tannins and a long, harmonious finish. The appassimento grapes lend concentration and richness, while the fresh grapes preserve vitality and balance.
Winemaking:
A blend of Malvasia Nera, Montepulciano, and Negroamaro grapes, partially dried using the traditional appassimento technique to concentrate sugars and flavours. Fermentation is carried out in stainless steel under controlled temperatures, preserving aromatic purity, before ageing in oak barrels to integrate structure, roundness, and subtle spice. The careful combination of dried and fresh grapes ensures a wine of elegance, depth, and approachability.
Food Pairing:
Pairs beautifully with roasted and braised meats, slow-cooked stews, hearty pasta dishes, and mature cheeses. Its richness and layered complexity also complement grilled game or dark chocolate desserts.
