Coquille de Mer Vermentino is a bright and lively white from the sun-drenched Languedoc region, capturing the freshness and elegance of the Mediterranean. Produced with meticulous care by Marilyn Lasserre and her team at Les Argelières, this wine reflects the region’s pebble and limestone soils, which enhance fruit expression and give the wine a mineral precision.
Tasting Notes:
Pale lemon in colour, the nose is fragrant with citrus, white blossom, and gentle apricot aromas. On the palate, ripe peach and tropical notes combine with a lively, balanced acidity, creating a crisp and refreshing wine. Light-bodied yet expressive, it is immediately approachable and full of charm.
Winemaking:
Grapes are harvested in the cool of dawn and early evening to preserve freshness, then carefully sorted and pressed. The clarified juice is fermented slowly at 13°C in stainless-steel tanks over three weeks, retaining vibrant fruit character and aromatic intensity. Post-fermentation, the wine is racked through a series of tanks to remove lees, lightly filtered, and bottled early the following spring to preserve its crisp, zesty style.

Delightfully versatile, Coquille de Mer pairs beautifully with seafood, shellfish, creamy chicken dishes, asparagus risotto, or fresh summer salads. It is equally charming served on its own on a warm day.
