Le Peewit takes its name from the Northern Lapwing, the migratory bird that travels each winter from the UK to the milder climate of Gascony in southwest France. It is here, in the rolling vineyards of the Côtes de Gascogne, that this expressive Sauvignon Gris is grown and crafted into a bright, characterful white.
Tasting Notes:
Pale yellow with subtle green reflections, the nose is aromatic and inviting, with notes of citrus, grapefruit and vine peach, complemented by hints of pineapple and delicate blossom. The palate is lively and well-balanced, combining juicy fruit with bright acidity and a smooth, elegant finish.
Winemaking:
An early-ripening variety, Sauvignon Gris is harvested at night in early September to preserve its delicate aromatics. After a short cold maceration to enhance varietal expression, the grapes are gently pressed using pneumatic presses. Fermentation takes place slowly at low temperatures in stainless steel, followed by around four months ageing on fine lees to add subtle texture and complexity.
Food Pairing:
A natural partner for grilled fish, roast chicken and fresh salads. Its aromatic style and balanced acidity also make it an excellent aperitif.
