Produced under Demeter-certified biodynamic principles with spontaneous fermentation, it reflects both the character of the grape and the authenticity of its origin.
Tasting Notes:
Bright cherry-pink in colour, with expressive aromas of fresh cherry, wild strawberry and redcurrant complemented by delicate floral notes. The palate combines the freshness and energy of a rosé with the depth and character of Montepulciano, offering juicy red fruit flavours, lively acidity and a subtle savoury edge. Well-balanced and refreshing, it finishes with impressive persistence and purity.
Winemaking:
Produced from 100% Montepulciano, the region’s flagship grape variety. After harvest, the juice remains in contact with the skins for only a short period, extracting its characteristic cherry-pink colour and delicate fruit profile while retaining freshness and elegance. Fermentation takes place naturally with indigenous yeasts, in keeping with the estate’s biodynamic and organic philosophy.
Food Pairing:
A versatile partner for antipasti, charcuterie, grilled seafood and Mediterranean salads. It also pairs beautifully with pizza, tomato-based pasta dishes and light poultry dishes.
