A traditional Vin Santo from the historic Castello di Brolio estate, this Chianti Classico expression reflects both the heritage of the Ricasoli family and the time-honoured winemaking methods of Tuscany.
Tasting Notes:
Deep amber in colour. The nose is rich and complex, opening with aromas of dried apricot, raisin and fig, followed by notes of honey, candied citrus peel and gentle nuttiness. On the palate, it is luscious and concentrated, with layers of dried fruit, caramel and spice balanced by a defined backbone of acidity. The finish is long, warming and elegantly persistent.
Winemaking:
Produced from a traditional blend of Malvasia, Trebbiano and Sangiovese grown in vineyards around 200 metres above sea level on well-drained alluvial soils. Following harvest, the grapes are naturally air-dried to concentrate sugars and flavours before slow fermentation and extended ageing in small wooden casks. This long maturation allows the wine to develop its characteristic depth, richness and aromatic complexity.
Food Pairing:
A classic partner for cantucci biscuits, almond-based desserts and dried fruit tarts. It also pairs beautifully with blue cheeses, or can be enjoyed slowly at the end of a meal as a digestif.
