A traditional Tuscan dessert wine from Fattoria di Calappiano, the 2018 Vin Santo del Chianti captures the rich, contemplative character of one of Italy's most treasured wine styles. Made from grapes dried after harvest to concentrate their natural sugars and flavours, it offers a harmonious combination of dried fruit, honey, toasted nuts and warming spice. Luscious yet balanced by gentle freshness, this is a wonderfully comforting wine to savour slowly.
Tasting Notes:
Deep golden amber in colour with warm copper highlights, the nose is rich and inviting with aromas of dried apricot, sultana and candied orange peel complemented by acacia honey, toasted almonds and vanilla. The palate is smooth and concentrated, revealing layers of dried figs, caramelised fruit and hazelnut alongside notes of toffee and sweet spice. A balancing thread of acidity brings freshness to the wine's luscious texture, leading to a long, mellow and beautifully nutty finish.
Winemaking:
Produced using traditional Tuscan methods, with selected white grapes, typically Trebbiano and Malvasia, laid out to dry after harvest to concentrate their sugars and aromatic intensity. The dried grapes are gently pressed, and the concentrated juice undergoes slow fermentation and extended maturation in small wooden casks known as caratelli. This patient ageing process develops the characteristic amber colour, richness and complex flavours of dried fruit, honey and toasted nuts associated with classic Vin Santo del Chianti.
Food Pairing:
An excellent match for traditional Tuscan cantucci biscuits, almond pastries, fruitcake and biscotti. It also pairs beautifully with aged Pecorino, blue cheeses, dried figs, toasted nuts and caramel-based desserts, while making a delightful after-dinner wine enjoyed on its own.
