A distinctive Piedmontese speciality, Barolo Chinato from Cocchi is a traditional aromatised wine that combines the structure of Barolo with a complex infusion of botanicals and spice, resulting in a richly layered, gently bitter-sweet expression.
Tasting Notes:
Deep garnet in colour. The nose is intensely aromatic, unfolding with notes of dark cherry, dried red fruits and cocoa, layered with warm spice, herbal complexity and subtle balsamic undertones. On the palate, it is rich and enveloping, balancing the depth of Barolo with bittersweet elements of quinine bark, gentian and rhubarb. Hints of dark chocolate, orange peel and spice carry through a long, warming finish, where sweetness and bitterness sit in elegant tension.
Production:
Crafted from DOCG Barolo wine, which is then aromatised with a traditional infusion of botanicals including quinine bark, rhubarb root and gentian flowers, together with a blend of aromatic spices such as cardamom and mace. These elements are carefully macerated to integrate with the wine, creating a complex, historic style that reflects its origins in Piedmont’s apothecary traditions.
Food Pairing:
Ideal served after dinner, either on its own or as an alternative to fortified wines. It pairs particularly well with dark chocolate, rich fruit-based desserts, blue cheeses and fine charcuterie.
