A finely crafted Crémant du Jura Blanc de Blancs from Domaine Benoît Badoz, produced in the foothills of the Jura Mountains near Poligny. Made exclusively from Chardonnay grown on marl and limestone soils, this traditional method sparkling wine reflects both the estate’s long heritage and its focus on organic vineyard management.
Tasting Notes:
Pale gold in colour with a fine, persistent mousse, the nose is elegant and precise, offering aromas of citrus, green apple and white flowers, alongside subtle toasty notes. The palate is fresh and well-balanced, combining bright acidity with flavours of lemon, orchard fruit and a gentle nuttiness. A delicate mineral edge carries through to a clean, refined finish.
Winemaking:
Produced by the traditional method with secondary fermentation in bottle, allowing for the development of fine bubbles and added complexity. The Chardonnay grapes are sourced from marl-rich soils, contributing to the wine’s characteristic freshness and mineral structure, with careful ageing on the lees enhancing texture and depth.
Food Pairing:
An excellent apéritif, also well suited to seafood, shellfish and light poultry dishes. Its freshness and subtle complexity pair particularly well with Comté and other Jura cheeses.
