Tasting Notes:
Pale gold in appearance with a fine, persistent mousse. The nose opens with expressive aromas of crisp apple, ripe stone fruit and citrus peel, layered with subtle brioche and biscuit notes from extended lees ageing. On the palate, vibrant orchard fruit and gentle stone fruit flavours are supported by refreshing acidity, with Pinot Noir providing structure and depth. The finish is elegant and lingering, with a fine balance of fruit purity and creamy autolytic complexity.
Winemaking:
Produced from a traditional blend of 60% Pinot Noir, 25% Pinot Meunier and 15% Chardonnay, the fruit is hand-harvested from Foxhole Vineyard in West Sussex. Gentle pressing and cool fermentation preserve freshness and aromatic clarity. The wine undergoes secondary fermentation in bottle, followed by extended lees ageing for approximately two years, building texture, finesse and classic traditional method complexity prior to disgorgement.
