Tasting Notes:
Pale gold in colour. The nose is complex and expressive, opening with notes of honeyed citrus, quince and white peach, layered with hints of spice, cedar and delicate floral tones. On the palate, it is both opulent and vibrant, with flavours of candied fruit, tropical notes and marmalade balanced by a lively acidity. The finish is long, refined and beautifully poised, with a freshness that lifts the wine’s natural sweetness.
Winemaking:
Produced from a blend of Sémillon and Sauvignon Blanc grown on gravel, sand and clay soils in the heart of Sauternes. The grapes are harvested in successive passes, selecting berries affected by noble rot (botrytis cinerea) to concentrate sugars and aromatics. Fermentation takes place with indigenous yeasts, followed by ageing in French oak barrels for around 18 months, contributing texture and complexity while preserving purity of fruit.
Food Pairing:
An excellent partner for foie gras, blue cheeses and fruit-based desserts. Equally well suited to richer dishes where its balance of sweetness and freshness can shine.
