An extraordinary mature Sauternes from the legendary Château d’Yquem, the only estate classified as Premier Cru Supérieur in the 1855 classification. The 2007 is a beautifully opulent yet remarkably precise expression, combining intense botrytised fruit with vibrant acidity, exceptional concentration and extraordinary length. Presented in a 37.5cl half bottle, it is an ideal format for enjoying one of the world’s greatest sweet wines.
Tasting Notes:
Luminous golden amber in colour, the nose is intensely aromatic and complex, revealing layers of apricot, peach, candied citrus and pineapple alongside notes of acacia honey, orange marmalade, vanilla and gentle spice. The palate is rich, luscious and beautifully concentrated, with flavours of ripe stone fruit, citrus preserve and honey balanced by vibrant acidity that provides remarkable freshness and precision. Subtle notes of saffron, toasted nuts and botrytis spice add complexity, leading to an exceptionally long, luxurious and persistent finish.
Winemaking:
Produced predominantly from Sémillon with Sauvignon Blanc, grown in the estate’s vineyards in Sauternes. Grapes affected by noble rot, Botrytis cinerea, are harvested by hand through a succession of selective passes through the vineyard, ensuring that only perfectly concentrated berries are picked. Fermentation and extended maturation in French oak barrels develop extraordinary richness, complexity and longevity while the wine’s natural acidity maintains elegance and balance.
Food Pairing:
An excellent match for foie gras, Roquefort, blue cheeses and fruit-based desserts featuring apricot, peach or citrus. It also pairs beautifully with lobster, rich pâtés, lightly spiced Asian dishes and tarte tatin, while its extraordinary complexity makes it equally compelling served alone at the end of a meal.
