Tasting Notes:
Pale gold in colour with a fine, persistent mousse. The nose is expressive and layered, showing aromas of ripe yellow fruits, baked apple and subtle exotic notes, alongside hints of toasted walnut, honey and a gentle almond nuance. On the palate, the wine is structured yet approachable, combining fresh orchard fruit with touches of red fruit and a lightly creamy texture. Fine bubbles carry the flavours through to a balanced, elegant finish with delicate nutty complexity.
Winemaking:
Produced from a blend of Pinot Noir and Chardonnay grown across vineyards in the Côte des Bars, the grapes are hand-harvested and carefully selected. Following alcoholic and malolactic fermentation, the wine is blended and bottled for secondary fermentation. It is then aged on its lees for between 24 and 36 months, developing depth and finesse, before disgorgement and the addition of a Brut dosage of around 8 g/l. A short further period of rest ensures integration and balance prior to release.

A versatile Champagne suited to a wide range of dishes, from seafood and shellfish to roast poultry and soft cheeses. Equally well enjoyed as an aperitif, where its balance of fruit and complexity can shine.
