Tasting Notes:
Pale straw in colour with a bright, clear appearance, the nose is clean and lifted with citrus peel, green apple and white blossom alongside the hallmark flinty minerality of Chablis. The palate is light yet expressive, showing lemon, orchard fruit and a subtle saline edge. Crisp acidity runs through the wine, giving energy and drive to a refreshing, well-defined finish.
Winemaking:
Grapes are harvested from selected parcels within the Chablis region and gently pressed using pneumatic press. After static settling, fermentation takes place in temperature-controlled stainless steel and enamel-lined tanks to preserve aromatic purity and freshness. The wine is then aged in tank before bottling at the domaine. The magnum format allows for slower evolution in bottle, enhancing balance and aromatic development over time.
