A rare Sardinian gem, Passo Antico combines the richness of 100 year old vines with the elegance and vibrancy of the island’s native grapes. Crafted in the appassimento style, this wine balances concentration and freshness, delivering depth and approachability in equal measure.
Tasting Notes:
Deep ruby in colour, the nose is expressive with stewed damsons, black cherries, and subtle autumnal spice. On the palate it is full-bodied yet fresh, with layered flavours of ripe summer berries, nuanced dark fruit, and gentle spice. The appassimento grapes provide concentrated richness, while the fresh fruit ensures lively acidity and balance, culminating in a long, harmonious finish.
Winemaking:
A blend of Cannonau (Grenache), Carignan, and Barbera Sarda, sourced from vines over 100 years old. A portion of the grapes is air-dried after harvest using the traditional appassimento method to concentrate sugars and flavours. Fermentation takes place under careful temperature control, preserving the aromatic character of the fruit. The combination of dried and fresh grapes results in a wine of elegance, depth, and vibrant structure.
Food Pairing:
Perfect with roasted meats, braised lamb, game, and aged cheeses. Its balance of freshness and richness also complements hearty pasta dishes or slow-cooked Mediterranean stews.
