Tasting Notes:
A mature and complex style of sparkling wine. Expressing aromas of toast, honeycomb, sourdough and nougat. Flavours of baked apple and citrus peel are supported by the toasty notes from the extended lees aging.
Vineyards and Winemaking:
It's produced from grapes sourced from a selection of vineyards from the Penedés area, located at 250 metres
above sea level. This is the heart of quality Cava country. The grapes are harvested in mid September, and following an initial fermentation the wine is transfered to bottle for a second fermentation and 24 months lees ageing before it is disgorged and prepared for sale.
Food Pairing:
With a little more depth of texture and flavour this wine is more than just a delicious aperitif. Serve with delicate seafood or good old fish and chips.
